
Keto Grilled Cheese with Homemade Bread
Ingredients
For the bread
- 3 Tbsp almond flour
- 1 Tbsp avocado oil
- 1 large egg
- 1/2 tsp baking powder
- pinch salt
For the sandwich
- 2 slices cheddar cheese
- cooking spray made with avocado oil
Instructions
Make the bread
- Add the avocado oil and egg to a microwave-safe mug or ramekin and whisk until well combined. Stir in the almond flour, baking powder, and salt until smooth.
- Microwave for 60–90 seconds, or until the bread is set and springs back lightly when touched. Let cool for 1–2 minutes before slicing.
Assemble and toast the sandwich
- Preheat a skillet over medium-low heat.
- Slice the bread in half. Place one slice in the skillet, top with the cheddar cheese, then place the second slice on top to form a sandwich.
- Lightly spray the outside of the sandwich with avocado oil cooking spray, or lightly coat the skillet instead. Cover and cook for 2–3 minutes, until the bread is golden and the cheese begins to melt.
- Carefully flip the sandwich and cook for another 1–2 minutes, until both sides are golden and crisp and the cheese is fully melted.
Cook over medium-low heat and keep a close eye on the sandwich. Keto bread browns more quickly than traditional bread, so lower heat gives the cheese time to melt before the bread burns.

Notes
Go wild with your cheese selection! Cheddar and American cheese are classic choices, but Havarti, Gouda, Swiss, mozzarella, or pepper jack all melt beautifully.
Why don’t I just use store-bought keto-friendly bread? I prefer homemade bread because I know exactly what’s in it. It also tastes better to me and crisps up beautifully for grilled cheese.
