Homemade Pork Sausage Patties
Ingredients
- 1½ lbs ground pork I use 85% lean
- ½ Tbsp salt
- ½ Tbsp sage, dried
- 1 tsp garlic powder
- ¾ tsp black pepper
- ¼ tsp nutmeg, ground
- ¼ tsp thyme, dried
- ½ tsp crushed red pepper flakes
- 1 Tbsp avocado oil for cooking
Instructions
Mix
- In a small bowl, combine the salt, sage, garlic powder, black pepper, nutmeg, thyme, and red pepper flakes.
- Add the seasoning mixture to the ground pork.
- Mix gently with your hands until the seasonings are evenly distributed. Avoid overmixing to keep the patties tender.
Form Patties
- Divide the mixture into equal portions and shape into patties.
- Make 2–3 ounce patties for a traditional breakfast sausage or 4-ounce patties for breakfast sandwiches.
Cook
- Heat the avocado oil in a large skillet over medium heat.
- Cook the patties for 3–4 minutes per side, or until nicely browned and the internal temperature reaches 160°F.
Meal Prep Tip: Make a double batch and freeze the uncooked patties with parchment paper between each one. Cook straight from frozen or thaw overnight in the refrigerator.

Notes
My mind is blown! I had no idea how easy it was to make breakfast sausage at home. For years I assumed sausage was some mysterious processed meat product that had to come from the grocery store. In reality, it’s as simple as seasoning ground pork and cooking it in a skillet. The result is a guiltless, flavorful breakfast sausage made without added sugar or fillers.
