Mix
In a small bowl, combine the salt, sage, garlic powder, black pepper, nutmeg, thyme, and red pepper flakes.
Add the seasoning mixture to the ground pork.
Mix gently with your hands until the seasonings are evenly distributed. Avoid overmixing to keep the patties tender.
Form Patties
Divide the mixture into equal portions and shape into patties.
Make 2–3 ounce patties for a traditional breakfast sausage or 4-ounce patties for breakfast sandwiches.
Cook
Heat the avocado oil in a large skillet over medium heat.
