Keto Tomato Soup

Today I’m digging in with a quick, creamy keto tomato soup. I use simple ingredients that are blended smooth to make a soup that is surprisingly filling and ready in minutes!


Ingredients

  • 1 cup – marinara sauce with no added sugar, like Rao’s
  • 1 cup – cottage cheese
  • 1 cup – chicken bone broth

Directions

1. Puree Ingredients
  • Add marinara, cottage cheese, and bone brother to a blender
  • Blend thoroughly until completely smooth
2. Heat
  • Pour into a saucepan and heat over medium-low heat
  • Warm gently, stirring occasionally, 5-10 minutes
  • Do not boil or use high heat, it can impact the texture
3. Finish & Serve
  • Add salt and pepper to taste
  • Thin with additional broth, if needed, or simmer slightly to thicken
  • Serve warm

Notes

I use Good Culture cottage cheese for the lowest possible carb count.

Pairs well with my Keto Grilled Cheese.
