Today I’m digging in with a flavorful and comforting low-carb grilled cheese sandwich. But the real key here is using bread from my 90 Second Microwave Keto Bread recipe.
Most processed keto breads are packed with modified starches, wheat gluten, and fibers that can still spike blood sugar, cause bloating, or stall progress. They might fit your macros, but they don’t always behave like true low-carb foods in your body. Since I have a history of insulin resistance and bloating, I’ve found it’s worth it to spend the literal two extra minutes to whip up a fresh batch of microwave keto bread for this amazing sandwich. It’s simple, uses whole ingredients, and actually acts keto. No weird ingredients or surprises. Plus, it crisps up beautifully in a pan, which is kind of the whole point of grilled cheese.
Ingredients
- 3 Tbsp – almond flour
- 1 Tbsp – oil or melted butter
- 1 large – egg
- 1/2 tsp – baking powder
- pinch – salt
- spray – avocado oil
- 2 slices – cheddar cheese
Directions
1. Mix
- Pour oil into a microwave-safe mug
- Add egg and whisk well
- Stir in almond flour, baking powder, and salt
2. Cook
- Microwave for 60-90 seconds
- When done, bread should look set and springy, not wet
- Let cool for 1-2 minutes
3. Toast
- Pre-heat a medium skillet over medium-low heat
- Slice the bread in half and top each half with a slice of cheddar cheese
- Lightly spray the skillet with avocado oil, then place the bread in the pan, side by side and cheese side up
- Cover with a lid and cook for 2-3 minutes, until the bread is toasted and the cheese has started to melt
- Once melted, smush the two halves together (cheese sides in)
- Cook for an additional 30-60 seconds per side until golden and crisp
- Serve hot
Notes
I do not butter my bread because it’s already got plenty of fat to crisp from the oil (or butter) and egg.
Feel free to go wild with your cheese selection! Cheddar or American cheese is traditional, but consider mixing it up with havarti, gouda, swiss, or even pepper jack.
